A seasoned team of culinary professionals aims to elevate the dining experience at the new Hawaii Prince Hotel Waikiki and Golf Club, already known by visitors and locals alike for its fresh island-style cuisine. The hotel’s new signature restaurant, 100 Sails Restaurant & Bar, formerly Prince Court, is lead by Chef de Cuisine Joseph Almoguera while Executive Chef Kirby Wong and Executive Sous Chef Lance Shimabuku oversee all food and beverage operations including in-room dining, banquets and other new soon-to-be announced dining experiences.
Kirby Wong, Executive Chef
Executive Chef Kirby Wong has been with Hawaii Prince Hotel Waikiki and Golf Club since 2006. As Executive Chef, Wong’s responsibilities include managing all kitchen operations and supervising culinary activities for all hotel banquets, room service and restaurant venues. In late November, Wong will add the hotel’s recently announced restaurant, 100 Sails Restaurant & Bar, to his repertoire.
Wong previously held the title of Sous Chef at Hawaii Prince Hotel Waikiki and Golf Club and has been with the property for ten years. Prior to his work at the hotel, Wong honed in on his culinary skills at the Ilikai Hotel for 25 years. He also worked at Prince Kuhio Hotel and Little George’s Restaurant, giving him over 40 years of experience.
Wong was born and raised in Makiki and attended Kapiolani Community College’s Culinary Arts Program where he earned a Culinary Certificate. Wong currently lives in Honolulu with his wife and two children.
Lance Shimabuku, Executive Sous Chef
Executive Sous Chef Lance Shimabuku joined the culinary team at Hawaii Prince Hotel Waikiki and Golf Club in 2013 and brings an impressive 40 years of experience. As Executive Sous Chef, Shimabuku oversees all kitchen operations within the numerous hotel restaurants, including the highly anticipated 100 Sails Restaurant & Bar.
Shimabuku was born and raised in Kaimuki and attended Kapiolani Community College’s Culinary Arts Program where he earned a Culinary Certificate. Prior to his work at the hotel, Shimabuku was the Executive General Manager of Rainbow Drive-In. Before that, he spent 25 years with the Ilikai Hotel, where he earned the title of Executive Chef. Shimabuku currently resides in Kaimuki with his wife and two children. Shimabuku also has two grandchildren.
Joseph Almoguera, Chef de Cuisine
Chef de Cuisine Joseph Almoguera takes the helm of the new 100 Sails Restaurant & Bar, formerly Prince Court, at Hawaii Prince Hotel Waikiki and Golf Club. He has been a member of the Prince Resorts family since 2013 and previously held the title of Sous Chef.
Discovering his passion for cooking at an early age, Almoguera’s 20-year culinary career includes positions at John Taiyo’s Cuisine Corporation, Kuakini Health System, Hilton Waikoloa Village and The Fairmont Orchid. Almoguera has also held the position of Executive Sous Chef at Waikoloa Beach Marriott for six years.
Almoguera describes Hawaiian Regional Cuisine as his specialty and is an incredibly talented ice carver. Under the tutelage of chefs from Japan and Hungary, he has learned and refined his technique of ice carvings. Almoguera was born and raised in Guam, and currently resides on Oahu with his wife and two children.
